BOOK RECOMMENDATIONS

For the week of June 4th, 2003

If you want to learn more about traditional raised breads pick up Brother Junipers Bread Book: Slow Rise as a Method and Metaphor by Br. Peter Reinhart. The paperback is still available. This book is part philosophy, part cookbook and all delightful. Peter Reinhart tells us, "Most people tend to rush bread into the oven too soon and end up with a small characterless loaf." Good advice for bread baking and life. You can purchase this book at your local bookstore or by clicking the above photo or hyper-text to Amazon.com.
Six Thousand Years of Bread By Heinrich Eduard Jacob does not have one recipe in the entire book, but this paperback is one of the most complete books on bread history available in print. No serious baker, or cook interested in food history, should be with out it. You can purchase this book at your local bookstore or by clicking the above photo or hyper-text to Amazon.com.
