BOOK RECOMMENDATIONS

There are very few cookbooks devoted exclusively to squash. However the two that I have recommended will probably keep you in recipes for quite awhile. Winter Squash and Pumpkins by Jack Hazeltine is part of the “Seed to Supper” series. This book takes you through planting, cultivating and preparing squash.
Pumpkin, Butternut and Squash by Elsa Petersen-Schepelern is a good starter book for the family that finds fault in this fall favorite. Elsa explores the versatile and delicious ways you can prepare this vegetable from soups to soufflés.
