BOOK RECOMMENDATIONS

One of my very favorite TV cooks is Rachael Ray. She has a way about her that seems to say, “Come on if I can do this, so can you!” Her book Comfort Foods continues her TV tradition and all the recipes take 30 minutes or less. Try out the “one-pot” meals for easy, comforting food in less time than it takes to take out.
The problem with comfort foods is that they are usually filled with fat, carbs and calories. The Low-Carb Comfort Food Cookbook by Michael R. Eades, Mary Dan Eades and Ursula Solom cuts the carbs in your favorite comforting recipes. With over 300 low-carb recipes this book should keep you cooking all your long. If you are on a low-carb diet you will be pleased with the recipes for Melt-in-your-mouth pancakes, Deluxe low-carb macaroni and cheese, Soft crust pizza, Fettuccini Alfredo, Low-carb lasagna and many more.
